Vijai K. Pasupuleti, Ph.D., is founder of SAI International that engages in research, consulting and marketing for biotechnology, pharmaceutical and nutraceutical companies. For almost two decades, he has been working with protein hydrolysates and bioactive peptides and has developed several new products. His main areas of research have been enzymatic hydrolysis of proteins and their applications in a wide range of industries. He is the co-editor of a book, author and co-author of several book chapters and publications. He has chaired and co-chaired several technical sessions on protein hydrolysates and bioactive peptides. Arnold L. Demain, Ph. D., is Research Fellow in Microbial Biochemistry in the Charles A. Dana Research Institute for Scientists Emeriti (R.I.S.E.) of Drew University. He has spent many years in the area of microbial production of primary and secondary metabolites of microorganisms. His experience includes 15 years at Merck and Co., Inc., 32 years at the Massachusetts Institute of Technology (MIT) and 9 years at Drew University.
